Shelly's Cheez Please Soup

Shelly's Cheez Please Soup

I recently tried "Cheez Please Soup" from The Ultimate Uncheese Cookbook (another Joanne Stepaniak book) and it was amazing!!!  Really thick, creamy and cheesy tasting. Could be a dip if you leave out the milk/broth. The first time I made it with broccoli. Next time, we'll be adding chilies, tomatoes, and cilantro for a "Nacho" version.

I changed hers a little, so here's my version.

3 small potatoes, peeled and diced
1 large carrot, chopped
1 small onion, chopped
2 cups vegetable broth
1 15 oz. can great northern beans, rinsed and drained
1/2 cup nutritional yeast flakes
2 tablespoons fresh lemon juice
1 1/4 teaspoons salt
1 teaspoon onion powder
1/4 teaspoon garlic powder
2 cups cooked broccoli, chopped into bite size pieces
1 cup rice milk

Place potato, carrot, onion, and vegetable broth in large pot and bring to a boil. Reduce heat, cover, and simmer, stirring occasionally, until vegetables are tender. Allow vegetables to cool.  When vegetables in pot are cool, add beans, nutritional yeast flakes, lemon juice, salt, onion and garlic powders and mix well. Puree in food processor, or in batches in blender, until completely smooth. Pour into clean pot and warm over low heat until hot. Add broccoli. At this point, add rice milk until desired consistency is achieved.
