Green Bean Medley

Green Bean Medley

Serves 4-6
Prep time: 20 min
Cooking time: 30 min

1 med onion, chopped
1/2 pound mushrooms, chopped
1 med red bell pepper, chopped
2 cloves garlic, minced
1 cup water
3 tbs soy sauce
1 pound green beans, trimmed and cut into 1 1/2 inch pieces

Place the onion, mushrooms, bell pepper and garlic in a nonstick frying pan with 1/2 cup of the water. Cook, stirring frequently, until the water evaporates and the vegetables begin to stick to the bottom of the pan. Add 1/4 cup of the remaining water. Cook, stirring, until the water evaporates and the vegetables begin to stick. Add the remaining water and repeat this step. Add the soy sauce, mix well, and set aside.

Steam the green beans over boiling water until tender, 10 to 15 minutes. Remove from the heat and place in a bowl. Add the vegetable mixture to the beans and toss to mix. Serve hot.
