Basil-Lover’s Green Beans

Basil-Lover’s Green Beans

  • 1 lb green beans
  • 1 small zucchini or other summer squash (about 1 C of chunks)
  • 1 C fresh basil leaves
  • ½ teaspoon salt
  • 1 med. sized clove garlic

Trim ends from beans. Break beans in to 1-inch pieces. Steam over boiling water for 7 to 10 minutes, or until tender.

While beans are cooking, cut zucchini into chunks. Place into a food processor along with basil and salt and garlic. Process until smooth. Toss with beans.
