Carrots In Love

- 8 medium carrots, peeled and sliced
- 3 bananas, peeled and sliced
- 1/2 C orange juice OR 1/3 C orange juice and 2 Tbs lemon juice
- 1/2 C golden raisins
- 1 to 2 T minced fresh ginger (optional)
- 1/4 C sliced toasted almonds (optional)
Simmer sliced carrots in water until almost tender. Drain. Add bananas and
juice and bring to a simmer again. Bananas will swell and then dissolve to form
a sweet glaze. Just as carrots become cooked, add raisins and ginger. Stir to
coat all ingredients and serve hot. Sprinkle with toasted almonds if desired.
