Kale and Potatoes

Kale and Potatoes

1 lb. kale
3 large potatoes, scrubbed and cut into quarter-inch slices
onions of choice: leeks, red or yellow onion, etc., chopped
2-3 cloves of garlic, minced
3/4 cup water
salt to taste (optional)

Sauté the onions and garlic in a bit of water. Add kale and potatoes in several layers. Cook under high pressure for 5 min., then quick release.

This recipe is for a 6 quart pressure cooker. I got the original recipe from Lorna Sass' Cooking Under Pressure and altered it a bit (omitting the oil). Enjoy!
