Creole Potatoes

Creole Potatoes

Serving Size  : 6     

  8             medium  potatoes
  1              large  sweet potato
  1                cup  frozen peas
  1                cup  frozen green beans
  1                cup  frozen corn
  1                cup  frozen lima beans -- (or other bean)
  1         tablespoon  Creole seasoning -- (I use 2)- recipe below
     1/2           cup  water

Dice potatoes (about 1/2 inch), add other ingredients, mix, cover and bake for 1 1/2 to 2 1/2 hours at 375F.

Creole seasoning:
3 tablespoons paprika
1 tablespoon each of salt, garlic powder, onion powder, black pepper, cayenne, oregano, thyme

Optional Microwave Instructions:  Cook the diced potatoes with 1/2 cup water in a covered dish on high power for 10 minutes.  Transfer to a oven-proof dish, add all other ingredients, cover and cook at 375 for about 1/2 hour.

NOTES : A store-bought Creole seasoning can be used instead of this one.
