Artichoke Hearts and Spinach

Artichoke Hearts and Spinach

This recipe is a variation on a receipe from the Mid-1980's from an issue of "Sunset Magazine". However, I have "McDougallized" it in such a way, that I doubt the original author would even recognize it.

1-15 oz can artichoke hearts
1-10 oz box of frozen spinach, thawed
nutmeg, scant
black pepper, to taste

Slice the artichoke hearts in half and arrange on the bottom of a small microwave safe baking dish. Arrange the thawed spinach on top in a layer and mash down. Sprinkle with a bit of nutmeg and black pepper, to taste.

Microwave for about 2 minutes. Dinner is ready.

This is a great dish for when you don’t want any extra calories and a splurge for the artichoke hearts fits into your budget.
