- 2 small acorn squash
- 1 C applesauce
- 1 Tbsp maple syrup
- 1/4 C chopped walnuts
- 1/2 tsp cinnamon
1) Wash, halve, and remove seeds from squash. Place squash halves, cut side down, in a microwavable baking dish, and cover. Microwave on HIGH for 6-9 minutes or until tender.
2) In a bowl combine applesauce, maple syrup, nuts, and cinnamon.
3) Spoon the applesauce mixture into squash halves. Cook on HIGH for about 3 minutes more, or until applesauce mixture is heated.
