Oshitashi (Spinach with Roasted Sesame Seeds)

Oshitashi (Spinach with Roasted Sesame Seeds)

Adapted from Madhur Jaffrey's World of the East Vegetarian Cooking

Oshitashi is the Japanese name for this dish, which is called Sigumchi Namul in Korea.

  • 10 ounces to 1 pound spinach, well washed and trimmed
  • 1 tablespoon lite soy sauce
  • 1 1/2 tablespoons mirin
  • 1 tablespoon sesame seeds, roasted and lightly crushed

Fill a pot with water and bring to a boil.  Cook the spinach 2 to 3 minutes or until it has wilted completely.  Drain it in a colander, running some cold water over it to cool it off.  Squeeze all the water out and put it into a bowl.

Add the remaining ingredients and mix well.  Serve at room temperature.

Quick Tip:  Frozen spinach can be used.  Simply follow package directions, cooking only until thawed completely and hot throughout.  Be careful not to overcook.  The follow directions above.
