Irish Bean Stew

Irish Bean Stew

1 onion, chopped
1/3 c. water
3/4 t. caraway seeds (I put a whole t.)
2 c. frozen chopped hash browns
2 c. frozen mixed vegetables (I used baby carrots and baby limas)
1-3/4 c. vegetable broth (I used one whole can--I think around 14-15 oz.)
4 c. chopped cabbage (this was 1/2 head)
2 15-oz. cans small white beans
ground black pepper to taste

Place onion and water in large pot. Cook, stirring frequently for 3 minutes. Add caraway seeds and cook for another minute. Add potatoes, veggies, and broth. Mix well, cover, and cook for 5 minutes. Stir in cabbage and cook 5 minutes. Add beans and cook for 10 minutes, stirring occasionally. Season with pepper and serve.
