Easy Black Bean Chili

Easy Black Bean Chili

Recipe by: Vegetarian Times

Servings: 4-6

  • 2 15oz cans black beans, rinsed and drained
  • 1 16oz jar roasted garlic salsa
  • 1 bunch scallions, chopped
  • 1 10oz package sweet frozen corn
  • 1/2 C chopped cilantro
  • salt (optional)

- Combine beans, salsa, and scallion in a saucepan. Cover, and cook over medium heat, stirring occasionally, for approx 10 minutes

- Stir in corn, cilantro, and salt to taste, and cook, stirring occasionally until heated through.
