Easy Black Bean Chili

Servings: 4-6
- 2 15oz cans black beans, rinsed and drained
- 1 16oz jar roasted garlic salsa
- 1 bunch scallions, chopped
- 1 10oz package sweet frozen corn
- 1/2 C chopped cilantro
- salt (optional)
- Combine beans, salsa, and scallion in a saucepan. Cover, and cook over
medium heat, stirring occasionally, for approx 10 minutes
- Stir in corn, cilantro, and salt to taste, and cook, stirring occasionally
until heated through.
