Thai Soy Cakes

These were very good. The original recipe called for bread, but I tried it both ways and couldn't taste the difference. You can also bake these if you want, but they take much longer that way and it doesn't improve the taste (and they also stuck to my cookie sheet!)
1 cup okara, firmly packed*
1/2 cup tofu, mashed
¾ cup rolled oats (not instant oats)
1 onion, finely chopped
1 tbsp. minced garlic
1 tbsp. sweet chili sauce or ketchup
1 tbsp. chopped mint
1 tsp. salt
2 tsp. ground flax seeds
1/4 cup hot water
extra sweet chili sauce, or fresh salsa of your choice, to serve
Place first 8 ingredients in a bowl, and mix with your hands, until well combined. Mix the ground flax seeds with the hot water and stir until it becomes thick. Add it to the tofu mixture and mix thoroughly. Allow mixture to rest 20-30 min.
Heat griddle over medium heat and coat with cooking spray. Form mixture into 12 cakes. Cook cakes for a few minutes on each side until golden. Serve with sweet chili sauce or the fresh salsa of your choice.

*Okara is the pulp left over from making soy milk. It's full of fiber and protein.
