Easy Potato Soup

Easy Potato Soup

I was chopping veggies to refill my snack tray and I just couldn't stand to throw out those beautiful celery leaves. So I made this simple soup. It tasted pretty good and was so pretty that I had to take a picture. I know it's a little heavy in the starch but it turned out so well that I just had to share.

1 medium red potato, cut into cubes
1/2 small carrot, sliced thin
2/3 c. celery tops and leaves, chopped
1 c. plain unsweetened soy milk
dried dill, garlic, and black pepper to taste

Boil the potato and carrot in water until soft (about 15 minutes), drain. Lower the heat, add remaining ingredients and simmer to combine the flavors.

Makes 1 big serving or 2 small bowls just right to eat along side a salad.
