prep time: 15 minutes
chilling time: 2 hours or longer

1 1/2 cup no salt tomato sauce
1/4 cup water
1 cup chopped tomato
1 large clove garlic, chopped
1/2 teaspoon ground cumin
2 tablespoons red wine vinegar
1 tablespoon lemon juice
1/2 cup peeled, chopped cucumber
1/2 cup chopped green pepper
2 green onions including tops, chopped
dash hot pepper sauce to taste (optional)
chopped fresh parsley of chopped fresh cilantro for garnish

1. Combine all ingredients except parsley or cilantro to medium bowl.

2. Cover bowl, chill several hours or overnight to allow flavors to blend.

3. Serve very cold, garnished with parsley or cilantro to taste sprinkled on top.
