I lightly sautéed (in veg stock) some onion and broccoli while
I cooked some barley in the pressure cooker. Then I whirled the veggies
in the blender with some spinach and added this to the barley pot with a
bit of "milk," a couple of veggie bouillon cubes and
about a 1/4 tsp of nutmeg.
It tasted awesome and the kids loved it especially when I named it Shrek Pond
Scum
Soup since it was such a bright green.
