Tomato, Leek and Potato Soup

Tomato, Leek and Potato Soup

Servings: 4

  • 2 medium leeks
  • couple of cloves of garlic
  • basil etc.
  • 5 baby potatoes - 2 or 3 medium ones
  • one can chopped tomatoes in tomato juice
  • 1 medium onion
  • A little bit of olive oil - optional
  • 2 - 3 c vegie stock/water
  • 2 ts sugar
  • salt and pepper
  • water

Wash and chop leeks into rings. Dice potatoes finely, Thinly slice onion. Sautee the onion and leek until soft in the olive oil or just in water if you prefer. Add tomatoes and potatoes, stir, simmer gently for 2 minutes. Add stock. Bring to boil. Stir in sugar and seasonings. Cook til spuds are soft. Cool, blend in blender. Add extra water if you need to.

I made this and it turned out nice but a bit plain - next time I would add more garlic and herbs tho. It keeps VERY well - nice on the 4th day. I am not so good at adapting recipes - the original used fresh tomatoes - so I had to really watch the water level and top it up occasionally. But it's quick and easy:)
