Zucchini and Hominy Soup

Serving Size : 8 

2 tablespoons water
1 onion -- diced
3 cloves garlic -- minced
4 zucchini -- sliced
1 cup mild green chile peppers -- peeled and chopped
6 cups vegetable broth, fatfree
4 cups hominy, yellow -- (2 pound cans) prefer low salt
1 teaspoon ground cumin

Sauté the onion and garlic in 2 tbsp water for 3 to 5 minutes. Add zucchini and green chiles and cook over medium heat, stirring occasionally, another 5 minutes. Add remaining ingredients and simmer, covered, over low heat for 45 minutes.
