Pumpkin Soup

heat about 1/2 c water in a pot
Add: 1 clove of garlic, chopped,
2 medium onions, chopped,
1 Tbsp minced fresh ginger (or 1 tsp grounded ginger)
let simmer in the water

after 1 or 2 minutes add:
600 g (21 oz) chopped pumpkin
stir fry for about 3 to 5 minutes
add in 2 or 3 parts
1/2 cup white wine

let all the wine cook away (then there is only the taste but no alcohol in it- but you can also use some more veggie broth but add it one after the other and let it also cook away)
add 4 cups veggie broth
let simmer for 20 minutes
season to taste with salt and pepper and a pinch of cinnamon and nutmeg.
