Mushroom Barley Soup

2 onions
2 stalks of celery
2 cloves of garlic
1 pound of mushrooms (crimini and portabella work well)
3 oz. of Braggs or soy sauce
1 cup barley
1 tsp. dill
1 tsp. parsley
10 cups of water
2 carrots
In a large pot, combine chopped onions, celery, garlic and mushrooms. I
added some water to this so that the veggies wouldn't stick to the pot. Saute in
water for about 4 minutes, and then add the barley, soy sauce, seasonings, and
water. Bring to a boil, and then simmer covered for 2 hours. 45
minutes before it's done, add the chopped carrots.
