Lentil Soup

1 cup dried lentils
4 cups of water or vegetable stock
1 onion
1 carrot
1 stalk of celery
1 potato
1 bay leaf
1 tsp. salt, or to taste

Mix all ingredients in a soup pot and cook until the lentils are very soft, about one hour. Makes about 4 to 5 cups.
