Easy "Chicken" Soup

Easy "Chicken" Soup

To make this even faster and easier, use dried ingredients in place of fresh.

In a large pot, bring 12 cups of water to a boil. Add vegan "chicken" broth.  I use a powder from Croyden House, called Instant Soup Mix, "chicken" flavor. 

Add:
1/3 cup onion
3 tablespoons parsley
1 cup sliced mushrooms (I used leftover stems)
salt and pepper to taste

Allow this to simmer for 5 to 10 minutes, then add:
2 cups rice
and cook according to rice directions.

Just before serving, add a splash of lemon or lime juice.

Caution: this stuff is almost too "chicken" tasting to eat, but it's tasty.
