Cream of Broccoli Soup
1 pound broccoli, chopped
1/2 pound mushrooms, chopped
1 medium onion, preferably Vidalia or Walla Walla, chopped
3 cups soy milk
1 tsp. tarragon
1/4 tsp. mace
salt and pepper to taste
Steam the veggies together for 10 minutes or until tender.
Blend together 1/2 of veggie mixture and 1 1/2 cups soy milk. Pour into soup pot. Blend remaining veggies and additional 1 1/2 cups soy milk and place in pot. Season with tarragon, mace, and salt and pepper to taste. Reheat for approximately 5 minutes over medium heat. Can thin with soy milk or water if desired.
