Broccoli "Cheese" Soup

Here's another broccoli idea for Ute ~ The source of this recipe is "Recipes of Friendship Cookbook", but I have adapted it to make it "fat free". By the way, this cookbook is an awesome, vegan book that was written by a teen-ager. She has developed the recipes herself (probably family recipes) and they are creative and yet very simple and usable.
1 1/4 cups cooked potatoes
1 1/2 cups cooked carrots
1 medium onion, steamed
1/2 cup small white beans, cooked (original recipes calls for sunflower seeds or cashews)
1 tsp. salt
4 cups broccoli
[I also add garlic powder, onion powder, and a chicken-style seasoning such as Bill's Best]
Steam broccoli until tender while preparing "cheese" sauce.
Blend small white beans (sunflowers or cashews) with just enough water to cover. Blend until very smooth. Add potatoes, carrots, onion, salt, [other seasonings], and remaining water. Blend until smooth. This may have to be done in two steps as you may not have enough room in your blender. [Work carefully, as blenders like to burp out hot liquid!]. Pour into a saucepan and add cooked broccoli. Heat over medium heat until thick and hot. Serve hot.
May substitute cauliflower for the broccoli; or use a mixture of cauliflower and broccoli.
