Carrot Orange Salad

Here's one I like from Moosewood Low Fat Favorites. The recipe, as written in
the book and as I will write it calls for honey, but I would imagine you could
replace the honey with any sweetener of your choice.
2 or 3 large carrots, grated
2 naval oranges, peeled and chopped
2 TB fresh lemon juice
1 TB honey substitute (such as agave nectar)
1/2 tsp cinnamon
Mix grated carrots and oranges in a bowl. In a small bowl combine remaining
ingredients and pour over carrots and oranges. Allow to sit for at least 10
minutes so the flavors will mingle.
