Raw Pumpkin Soup

I saw this recipe in The Bark magazine and thought I'd try it. Oh my, it's amazing! It was originally published in the book The Natural Nutrition No-Cook Book by Kymythy R Schultze (Hay House 2005).

Sometimes you find things that you think might be gross, and they end up delicious! I had to share:

2 Cups Pumpkin, peeled and diced (and yes, raw)
1.5 cups apple juice
1 cup carrot juice
1 avocado, peeled and pitted
1/4 cup raw pumpkin seeds
1 clove garlic
1 teaspoon fresh ginger
1/2 teaspoon cinnamon

Place all ingredients in a food processor or blender and puree.

That's it!
