Pasta Salad

- 4 cups cooked pasta
- 1 red onion
- 1 cup green beans
- 0.5 cup green peas
- 1 can sweet corn
- 1 can kidney beans
- aceto balsamico
- mixed salad herbs
- salt
- pepper of mixed colors
This is a good one if you have leftover pasta and can be served warm or cold. I usually use frozen vegetables and herbs and canned beans with this so it is a really quick recipe.
Toss finely chopped onion, beans and vegetables into a salad bowl and add pasta. Season with salt, vinegar, herbs and pepper mix.
Sometimes I also add a bit of curry paste dissolved in hot water.back to fatfreevegan.com
