Mushroom and Spinach Stroganoff
Mushroom and Spinach Stroganoff

Here's one of my all time favorites. It tastes great, it is fast, and simple:

1 pound of uncooked fettuccine or spaghetti
1/3 cup of water
1 onion, cut in half lengthwise and then sliced
4-5 cups of sliced white mushrooms
1 10-ounce package frozen chopped spinach, defrosted, or 5 ounces fresh spinach, chopped
1 cup of veg. broth
1 cup soy milk
5 Tbs soy sauce
2 Tbs white wine
a dash of cayenne pepper
freshly ground pepper to taste
2 Tbs cornstarch mixed in 1/4 cup of cold water

Cook pasta according to directions. Drain and rinse.

Meanwhile, place water, a teaspoon of minced garlic, (enough water or veg. broth to sauté) and onion in a large nonstick frying pan and sauté for 3 minutes stirring occasionally . Add mushrooms and spinach and sauté for about 3 minutes or so. Add the remaining ingredients except for the cornstarch mixture. Cook over medium heat, stirring occasionally about 12 minutes. Add the cornstarch mixture and stir until thickened. Serve over pasta. Enjoy!
