Chow Fun Noodles with Tofu

Chow Fun Noodles with Tofu

Yield: 4 servings

A very easy stir-fry to prepare. You can use your favorite cooked pasta in place of the Chow Fun noodles.

8 ounces baked tofu, diced
2 ea 12 oz. pkg Chow Fun noodles--or or any wide noodle, cooked
1 stalk celery; sliced
2  carrots, sliced & slivered
1 c green onion, chopped
1 pkg. bean sprouts
1 tsp. chopped garlic
1 tb toasted sesame seeds

Seasonings:

1/4 tsp. sugar
1 tsp. salt
1 tsp. shoyu or soy sauce
1 cup water
1 tsp cornstarch
2 tsp. mushroom sauce 

Stir-fry vegetables and garlic in a non-stick wok or skillet, adding a little water to prevent sticking.  Stir-fry only until slightly tender, about 2 minutes.  Add seasonings, noodles, and tofu and cook another 2 minutes. Do not overcook vegetables.

Arrange the noodles on, and garnish with sesame seeds and chinese parsley.
