These recipes are gluten-free
provided you use gluten-free versions of the ingredients. Problematic
ingredients (aside from wheat/rye/oats/barley/spelt) include grain and malt
vinegar, certain brands of mustards, many condiments (Tabasco brand is safe),
some spice mixes, soup and broth mixes, and some tofu. Anything flavored
must be checked, as gluten often hides in "natural flavors".
Some vegan "cheeses" have grains. Some soy sauces contain wheat.
Always read ingredients carefully, and consult gluten-free experts when you have
questions. Two good sources of information are Brain
Talk Celiac-Gluten Sensitivity Forum and Celiac.com.
