Vggiegirl's Herbalicious Purple Dressing

This is a fantastic, zippy, fatfree dressing. Great over baby spinach salads! - Aug 2, 2004

1/3 cup oil substitute
1/3 cup rice vinegar
1/4 cup water
5-6 purple basil leaves
1 clove garlic, crushed
1 tablespoon umeboshi plum paste (available at Whole Foods)
pepper to taste

to replace oil, take 1Tb cornstarch and dissolve in one cup cool water.  Simmer over med. heat until liquid clears up. This will last in fridge for up to 7 days. Use equal parts cornstarch mixture to replace oil.
