Sweet and Sour Sauce

(From "From the Earth: Chinese Vegetarian Cooking")

1/2 c red wine vinegar
1/3 c sugar
1 8 oz. can tomato sauce
1/8 teas salt
2 teas cornstarch mixed with 2 T cold water
2 T minced green pepper
2 teas minced coriander

Combine vinegar, sugar, tomato sauce, salt and dissolved cornstarch. Bring to a boil over moderately high heat, stirring frequently. Boil for 1 minute. Add the pepper and coriander. Pour into a bowl and serve warm or at room temperature.
