Pesto Inspired Salad Dressing

8 ounces avocado
2 ounces pine nuts
24 Fresh Basil Leaves
1 quart of low sodium vegetable juice
8 cloves of garlic
2 tsp salt-free Italian seasoning
5 TBSP + 1 tsp lemon juice
Blend well in vitamix or blender. If you get really large garlic cloves, like
what I've been getting lately, you might want to cut back a little on the
garlic. My last batch was a bit more intense than usual. I didn't know there was
any such thing as too much garlic, but apparently when it is raw, and you use
enough of it, it really can overpower other ingredients.
