Italian Dressing (oil free)

1/2 cup lemon juice
1/2 cup water
2 tsp. Italian herb seasoning (check label if gluten-free is needed; brands vary)
1 tsp. salt
1/8 tsp. garlic salt
1 1/2 - 2 Tbsp. pure fruit pectin (such as Surejell)
1 Tbsp. liquid sweetener (original recipe calls for honey)

Shake together. Chill.
