Improved Corn Butter

This is what I ended up with after trying Bryanna's Buttery Spread. The
coconut adds 5 grams of fat in the entire recipe but also a little fiber.
1/4 cup yellow cornmeal
1 cup water
1/4 cup soymilk
2 tsp. lemon juice
1 tsp. salt
2 Tbs. flaked coconut
Combine the cornmeal and water in a saucepan. Cook and stir until you have
made mush. Process remaining ingredients in blender well. Add the mush to the
blender. Blend very very well, until it is smooth. Yield is 12 to 14 oz.
