Creamy Basil Dressing

"Creamy" Basil Dressing

  • 2-3 Cups fresh basil leaves
  • 1/2 Cup green onion tops
  • 1 large garlic clove
  • 1/4 Cup soy mayonaise
  • 6 oz reduced fat silken tofu
  • Juice of half a lemon
  • 1 Tbl apple cider vinegar
  • 1 Tbl white wine vinegar
  • 1 Tbl balsamic vinegar
  • 1/2 Tbl Bragg's Aminos
  • 2 tsp dried sweet basil
  • 2 dashes salt free spike
  • 1-2 dashes sea salt (to taste/optional)

Chop the first 3 ingredients (potentially reserving 1 cup basil leaves) in food processor. Add mayo and tofu and blend until creamy. While blending add remaining ingredients, stopping to scrape down sides with spatula (and test for taste) as necessary.

I originally used about 2 cups of basil and the final product didn't seem quite basil flavored enough for me and tossed another cup in at the end. Then it was perfect. (Makes about 1 1/2- 2 cups)
