Eden Oil Substitute

Eden Oil Substitute

This recipe is for an oil substitute for use in salad dressings. The thing I miss about oil in my salad dressings is the "mouth feel", or the texture. This is not perfect and doesn't always do the trick, but I love using this to cut the fat in some of my favorite dressings. This recipe is from "The High Road to Health" by Lindsay Wagner. (Remember that old book?)

"This recipe comes to us from Eden Foods. Replace all or part of the oil in any cold salad dressing with this oil substitute."

1/3 C water
1/2 Tbs. agar flakes
1 C mild soy milk

-Place water and agar in a small saucepan and simmer, stirring often, until agar is dissolved, 5-8 minutes.

-Pour the soy milk into a blender and add the agar mixture.

-Add all the other ingredients, blend until smooth, and chill for 45 minutes. If making it to have on hand, store it in a closed container in the refrigerator without adding the other dressing ingredients, and use in place of oil in salad dressings.

makes 1-2/3 Cups
