Breakfast Potatoes

Breakfast Potatoes (Hash Browns)

I'm not sure this qualifies as hash browned potatoes, but I do diced potatoes in the oven and we eat them like hash browns. I cut up the potatoes into cubes and drop them into boiling water for about 5 minutes (if they're diced really finely, I give them less time). Then I remove them, drain them really well (sometimes even towel them off with a paper towel), and put them on a sprayed cookie sheet in a 375 degree oven. (Sprinkle with seasonings if you like, but wait until the last 5 minutes to throw in diced peppers, onions, etc.) 

Turn them after about 10 minutes and check them often after that for doneness. We eat these as breakfast potatoes and do the same thing for French "fries" (just cutting the potatoes into larger pieces).
