Incredible Berry Muffins

Incredible Berry Muffins

Servings: 9 muffins

- 1 1/2 cups white self raising flour*
- 3/4 tsp baking powder
- 3/4 tsp baking soda
- sprinkle of salt
- 1 med banana, mashed
- 4 1/2 tbs applesauce
- 3/8 cup of water
- 3/8 cup of maple syrup
- 1 tsp vanilla essence
- 3/4 cup berries**

Preheat the oven to about 375º F.

Combine the flour, baking powder, baking soda and salt in a large bowl and make a well in the centre. In another bowl, mix banana, applesauce, water, maple syrup and vanille essence, and pour into the dry ingredients. Mix thoroughly then carefully stir through the berries.

Spoon into silicon muffin pans and cook for 20-25 minutes or until the muffins are browned and well risen.

* You could probably use wholewheat flour but my mum can't digest it so I used white

** I imagine any berries could be used but I used fresh wild blackberries and the muffins just blew me away - they are delicious!!
