Granola

Granola

Here is a recipe I love for a no-added-fat granola. It is adapted from a recipe in John Robbins' Diet for a New World.  It does have nuts and sunflower seeds, which you could reduce, eliminate, or change, if you wish.

3 C rolled oats
1/2 C wheat or oat bran
1/2 C wheat germ
1/2 C coarsely chopped almonds
1/4 C raw sunflower seeds
1 C raisins
1/2 C coarsely chopped, pitted dates
1 tsp ground cinnamon
1/4 C maple syrup

In a large bowl, combine oats, bran, wheat germ, almonds, and sunflower seeds. Spread evenly on a baking sheet. Bake at 275 degrees for 15 minutes. Stir and again spread it out evenly. Bake for another 15 minutes.

Immediately transfer the mixture to a large bowl. Add the raisins, dates and cinnamon and stir together. Slowly pour in the maple syrup and stir (a lot!) to distribute evenly. Let cool completely before storing in an airtight container.
