Oatmeal Wheat Bread
Oatmeal Wheat Bread
(Bread machine recipe)

Makes 1.5 pound loaf (12-14 servings)

1 cup plus 2 tablespoons water
2 teaspoons salt
1 tablespoon unrefined cane sugar
1 cup unbleached flour
1.25 cups whole wheat flour
1.5 tablespoons wheat germ
0.5 cup oats (do not use quick cooking oats)
2 teaspoons active dry yeast

Put the ingredients in the brad pan in the order listed (or reversed if your machine calls for dry ingredients first). Select Basic Wheat, Light setting (or the equivalent setting for your machine). Press start.

When I made this, I just used the machine in the dough cycle. Remove the dough from the pan, let it set for about 5 minutes. Shape and place into a lightly-sprayed loaf pan (or use a non-stick pan). Let rise in a warm place for about an hour. Bake for about 40 minutes in a 350 degree F oven (this is an estimate, all ovens are different!). Remove from oven, let sit for about 5 minutes, then remove from pan and cool on a wire rack.

Great sandwich bread!
