Put flour and salt in a food processor. Process for 10 sec. With motor
running, add water in a
continuous stream. Process for an additional 10 sec. If mixture does not form a
ball add 3-4 T
more flour, and process again. Process 1 min. more. Knead dough on lightly
floured surface for
30 sec. Wrap in plastic and let sit for 30 min. Heat oven to 500 with rack in
center. Divide
dough into 8 pieces. Cover the pieces you aren't working with. Roll out the
dough very thin (as
thin as you can). Transfer to pan or pizza peel. Top with seasonings like
salt, pepper, spices,
herbs, crushed garlic. Cut into pieces (I just made indentations to break them
along). Spritz
the dough lightly with water. Bake for 2-3 min, depending on thickness of
cracker, on a baking
stone or cookie sheet.
