Cinnamon Raisin Bread

A hint: if you leave out the nuts, the fat drops from 6 grams to 1!
1 cup flour
1 cup whole wheat flour
1/2 tsp salt
1 1/2 tsp baking powder
1 tsp baking soda
1/2 tsp allspice
1/4 tsp nutmeg
2 tsp cinnamon
1 cup sour soy milk (soy milk + 1 tbsp vinegar)
1/2 cup maple syrup
1/2 cup raisins
1/2 cup chopped nuts (omit for fatfree version
Preheat oven to 350 degrees. In a large bowl, sift together the flours, salt,
baking powder, baking soda, and spices. Stir in the milk, sweetener, raisins and
nuts. Mix together gently until "just mixed." Spoon into a lightly
oiled loaf pan and bake for 45-50 minutes. Test with a knife to see if done. Let
the bread sit for 10 minutes before slicing. Makes 1 loaf.
