Chapati

Chapati

This is easy. Chapati is a flat bread very VERY similar to flour tortillas.

2 cups (500 ml) whole wheat flour, sifted
1/2 teaspoon (2 ml) salt
water

Combine the flour and salt in a mixing bowl (just sift them together)

Add up to 2/3 cup (165 ml) water, slowly pouring in just enough to form a soft kneadable
dough.

Turn dough out onto a floured working surface and knead with the RIGHT hand, or LEFT, or FOOT, anyway, knead it for about 8 minutes until silky smooth. You will know you have kneaded it enough when the flour wants to stick together as you pull it apart. What you have done is released the gluten.

Cover with an overturned bowl and let rest for a minimum of 1/2 hour up to 3 hours.

Knead again for about I minute.

Divide dough into 12 portions. Roll them into smooth balls and cover with a damp cloth.

Preheat a griddle or non-stick frying pan over medium low heat.

Dredge each ball in flour and roll into a flat round thing (pancake? Crepe? Tortilla? you get
the idea) about 6 inches (15cm) in diameter.

Pat off the excess flour and carefully put onto the grill or pan.

Cook for about 1 minute, turn, and cook on other side about 1/2 minute. Dark brown or black spots will appear when chapati is done

Keep and serve warm.
