Chocolate Banana Muffins

Chocolate Banana Muffins

  • 2 cups whole wheat flour
  • 1/2 cup sugar
  • 1/4 cup cocoa
  • 1 tbsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 3 very ripe bananas, mashed
  • 1 cup vanilla soy milk
  • 4 tsp vinegar

Preheat oven to 350 degrees.

Spray muffin pan with non-stick spray and set aside.

Mix dry ingredients together in a bowl.

In a separate bowl, mash bananas, add liquid ingredients and mix well.

Add liquid ingredients to dry and gently stir until just mixed...mixture will be quite thick. Divide equally among 12 muffin cups. Bake for 18 - 20 minutes. Let rest in pan for 10 minutes, then cool on a wire rack.

Note: to decrease the sugar, you can use 1/4 cup sugar and 1/4 cup Splenda granular
