Orange Flax Seed Muffins

1 cup cranberries, dried cherries or apples, chopped
1/4 cup vegan granulated sugar
1/4 cup orange juice
2 cups all-purpose flour
3/4 cup whole wheat flour
1/2 cup ground flax
1/2 cup vegan granulated sugar
2 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
1 tsp. dried orange peel, or orange zest
Substitute of your choice for 1egg - beaten
1/4 cup applesauce
1 1/4 cups orange juice

Mix the fruit, sugar and orange juice (if you use the apples skip the sugar). In a large bowl mix together the flour, flax, sugar, baking powder and soda, salt and orange peel. Combine the beaten egg substitute, applesauce and orange juice in a small bowl or measuring cup. Pour this into the dry ingredients. Stir until moistened, but don't over mix. Fold in fruit mixture. Fill the muffin cups 3/4 of the way. Bake at 375 degrees for 30 - 35 minutes until muffins test done.
