Pineapple Banana Thickshake

Pineapple Banana Thickshake

Recipe by: Yukiko Moriyama

Servings: 2 huge glasses :)

  • 400g Soft Tofu, well-drained
  • 1 Cup crushed pineapple with juice
  • 1 banana
  • 1/2 cup soymilk or ricemilk
  • 3T honey substitute (such as agave nectar)
  • 6 drops vanilla extract
  • cinnamon powder to taste

Combine all ingredients in a blender and blend until smooth.

The original "Milkshake" recipe called for 1 -2 cups crushed ice, which I didn't have, plus I added about 60g more tofu (to use the whole block), and it was a very large banana, so I got a Thickshake instead! (am drinking it now actually, will make it again)

From the Taste of Tofu volume in the Quick and Easy Cookbook series, by Yukiko Moriyama (c) 1988.
