French Lentils with Onion & Carrot

Servings: 4

- 1 TB water
- 1 medium yellow onion, peeled and chopped
- 1 carrot, peeled and diced
- 3 C water
- 1 C lentils, rinsed
- 1 bay leaf
- 1 tsp dried thyme
- salt & pepper, to taste

In a medium saucepan, sauté onion in 1 TB water on medium heat until softened, about 5 minutes. Add remaining ingredients and bring to a boil. Simmer until tender, about 25 minutes. Remove bay leaf, adjust seasoning and serve.
