Lentil Dal

Lentil Dal

2 large onions -- chopped
4 cloves garlic -- minced
1/4 cup water
1 teaspoon salt
1 teaspoon turmeric
2 teaspoons cumin seed
2 teaspoons coriander powder
1/2 teaspoon cayenne
2 cups lentils -- rinsed
5-6 cups boiling water

In a heavy kettle, sauté the onions and garlic in 1/4 cup water until the onion starts to turn golden, then stir in the salt and spices and continue to cook another minute.  Add the lentils and boiling water (start with 5 cups), then cover and simmer 1 hour, until the lentils are tender.  Stir occasionally while cooking.  If the mixture becomes too dry, add additional water.
