Burritos

Burritos

Okay, now you're talking my favorite... burritos.

The wrap:
try the Enzikiel Sprouted Grain Tortillas which is sold at Trader Joes. No fat, all organic.

The Bean filling:
1/2 cup pinto beans, 1/4 cup corn, 1/3 cup baked Japanese White flesh sweet potatoes, spices, 2 tbl tomato paste

The Veggies:
Chop up about 1 cup of zucchini, bell pepper, onion, broccoli, mushrooms, spices, tomato

Cooking:
the beans I pressure cook
the potatoes are chopped and broiled to get a nice toasted texture
the veggies are cooked in an Al-Cad pan with only water and tomato juice until just about to burn for the grilled flavor.

The spices are my own mix I keep stocked which has the usual mexican seasoning without salt

Add a little lettuce, green or red salsa, and a bit of plain, no sugar added Soy yogurt from Wildwood.

Wrap it up and enjoy.... (secret is to steam the tortillas before trying to fill them up, then fold up a napkin at one end to hold it all together).
