Black Bean-Quinoa Spread

Black Bean-Quinoa Spread

2 cups cooked black beans (rinsed and drained if canned)
1/4 cup vegetable broth
2 to 4 tsps canned chipotle peppers in adobo sauce, chopped
2/3 cup cooked quinoa
4 tsps lime juice or to taste
3/4 tsp. coarse salt
1/2 tsp. ground cumin (optional)
2 tsp. chopped fresh chives (optional)

Process black beans, broth, and 2 tsps chipotle peppers in a food processor until smooth. Transfer mixture to a medium bowl, and stir in quinoa, lime juice, salt, and cumin if desired. Adjust seasonings to taste and add additional chipotle if you would like a hotter spread. Sprinkle with chives and serve.

makes 1&3/4 cups
